The question is really at what point on the learning curve the product in question was fabricated. Likewise, one can teach the people in Chinese factories to do what once only Korean luthiers knew, teach Koreans what once only Japanese knew, and teach Japanese what once only Americans or Europeans knew. We have several outlets in Ottawa that have acquired the materials, the machinery, the methods, and the expertise, to make a great bagel that is indistinguishable from those coming from St. But just as one can teach South Asian bakers in Montreal to make the authentic bagels that were once only made by European ex-pat hands, you can also teach people living outside of Montreal to make "real" bagels. Those of us native Montrealers will argue that Montreal bagels, and ONLY Montreal bagels, are the real deal.
